Ingredients
Scale
4 slices brioche or sturdy white bread
4 slices Havarti or mild cheddar cheese
1 large ripe banana
2 tablespoons honey
2 tablespoons unsalted butter, softened
1/4 teaspoon ground cinnamon (optional)
Instructions
Step 1: Butter one side of each bread slice generously. Slice the banana into thin, even rounds, about 1/4 inch thick.
Step 2: On the unbuttered side of two bread slices, layer one slice of cheese. Arrange half of the banana slices evenly over the cheese. Drizzle 1 tablespoon of honey over the bananas, then place another slice of cheese on top.
Step 3: Cover each sandwich with the remaining two bread slices, ensuring the buttered side is facing outwards. Gently press down on the sandwiches to secure the layers.
Step 4: Heat a non-stick skillet or griddle over medium-low heat. Carefully place the assembled sandwiches into the hot skillet, butter-side down. Cook for 3-5 minutes, or until the bottom is golden brown and the cheese begins to melt.
Step 5: Carefully flip the sandwiches. Cook for another 3-5 minutes on the second side, pressing gently with a spatula, until that side is also golden brown and the cheese is fully melted and gooey.
Step 6: Remove the grilled cheese sandwiches from the skillet. If using, lightly sprinkle with ground cinnamon. Let cool for a minute before slicing diagonally and serving warm.
Notes
While this sandwich shines brightest fresh from the skillet, any scrumptious leftovers can be wrapped individually and refrigerated for up to 24 hours, though the bread may soften slightly.
To bring back that lovely crispness, gently reheat your leftover grilled cheese in a dry skillet over medium-low heat or in a toaster oven until warmed through and the cheese is gooey again, steering clear of the microwave.
For an extra touch of indulgence, try serving this warm treat with a sprinkle of powdered sugar, a dollop of whipped cream, or alongside a small bowl of Greek yogurt and fresh berries.
The magic truly happens over medium-low heat; resist the urge to crank it up, as this gentle warmth ensures your brioche toasts to a beautiful golden brown while the cheese and banana melt perfectly inside without burning.
