Ingredients
Scale
4 (6-8 oz) salmon fillets, skin on or off
8 oz lump crab meat, drained
1/2 lb cooked shrimp, peeled, deveined, and finely chopped
4 oz cream cheese, softened
2 tablespoons mayonnaise
2 tablespoons green onions, thinly sliced
1 teaspoon Old Bay Seasoning, plus extra for salmon
1/2 lemon, juiced
Instructions
Step 1: **Prepare the Seafood Stuffing.** In a medium bowl, gently combine the lump crab meat, chopped cooked shrimp, softened cream cheese, mayonnaise, sliced green onions, Old Bay seasoning, and fresh lemon juice. Mix until just combined, being careful not to break up the crab meat too much.
Step 2: **Prepare the Salmon Fillets.** Pat the salmon fillets dry with paper towels. Using a sharp knife, carefully slice a deep pocket into the side of each salmon fillet, making sure not to cut all the way through to the other side. Season the outside of the salmon fillets with salt, black pepper, and a light sprinkle of Old Bay seasoning.
Step 3: **Stuff the Salmon.** Carefully spoon the prepared crab and shrimp stuffing into the pockets of each salmon fillet. Press the stuffing gently to ensure it's compact within the pocket. You can mound a little extra stuffing on top if desired.
Step 4: **Bake the Stuffed Salmon.** Preheat oven to 400°F (200°C). Lightly grease a baking dish or line a baking sheet with parchment paper. Place the stuffed salmon fillets in the prepared dish. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the stuffing is heated through and lightly golden. Serve immediately.
Notes
Store any delightful leftovers in an airtight container in the refrigerator for up to two days, ensuring you enjoy them at their best.
When reheating, gently warm the salmon loosely covered with foil in a 275°F (135°C) oven until just heated through, preventing it from drying out.
Elevate this elegant dish by serving it alongside a vibrant lemon-garlic asparagus or a light, crisp green salad with a bright vinaigrette to beautifully balance the rich seafood stuffing.
For the most luxurious stuffing texture, ensure your cream cheese is fully softened before mixing and remember to gently fold in the crab and shrimp to preserve their delicate structure.
