Ingredients

  • Boneless, skinless chicken breasts: 1 lb (thinly sliced or shaved)
  • Provolone cheese: 8 slices
  • Yellow onion: 1 medium (thinly sliced)
  • Green bell pepper: 1 medium (thinly sliced)
  • Hoagie rolls: 4
  • Olive oil: 2 tablespoons
  • Salt: 1/2 teaspoon
  • Black pepper: 1/4 teaspoon

Instructions

  1. Step 1: Prepare the chicken and vegetables. Thinly slice the chicken breasts against the grain. Thinly slice the yellow onion and green bell pepper into strips.
  2. Step 2: Heat a large skillet or griddle over medium-high heat. Add 1 tablespoon of olive oil. Add the sliced onions and bell peppers and sauté for 5-7 minutes until softened and lightly browned. Remove the cooked vegetables from the skillet and set aside.
  3. Step 3: Add the remaining 1 tablespoon of olive oil to the hot skillet. Add the thinly sliced chicken. Season the chicken with salt and black pepper. Cook, stirring occasionally and breaking up any large pieces, for 5-8 minutes or until the chicken is cooked through and lightly browned.
  4. Step 4: Return the sautéed onions and bell peppers to the skillet with the cooked chicken. Mix thoroughly to combine all ingredients. Divide the mixture into four equal portions directly in the skillet. Place two slices of Provolone cheese over each portion. Cover the skillet for 1-2 minutes, or until the cheese is melted and gooey.
  5. Step 5: While the cheese melts, lightly toast the hoagie rolls if desired. Carefully scoop each cheesy chicken mixture portion into a hoagie roll. Serve your Chicken Cheese Steak Sandwiches immediately.
